The name Rebellion pays homage to Tim's late grandmother Maria; the name Maria is synonymous with Rebellious and it was in her kitchen that Tim fell in love with Italian food. Tim is a second-generation American and was fortunate enough to experience cooking the way it was done in the old country. This restaurant pays its tribute to her with its name and her face as its logo... again a restaurant designed with love and for love.
The name Rebellion is more than a tribute to Tim's grandmother but a name that signifies their intent and that intent was to create something that Danbury has yet to experience; To create dishes and cocktails that you wouldn’t find here. They wanted this restaurant to be a destination in Danbury and to be a symbol of pride for both the patrons and the community.
22 years ago Tim and Brian met in the seventh grade, it was there that their friendship was borne and would continue to grow for the next two-thirds of their lives. Two years ago, while out for Tim's 30th birthday, the idea to open a restaurant together came to be, and over the next two years they’ve toiled, sweat, and bled to build, what you are sitting in today.
They wanted to build something that demonstrated their desire for excellence. They spent months trying to build the perfect team. From the chefs to the bartenders to the waiters and bussers. In tandem with their team, they’ve designed a menu that will take you on an a gastro journey that will be complemented by carefully curated cocktails to elevate each dish. Food to them is a form of art and love and they hope with each bite you will experience what they’ve envisioned for you.
