Our Story: From Tradition to Rebellion
At Rebellion Kitchen + Bar, the heart of our restaurant beats in memory of Tim’s late grandmother, Maria. Her kitchen was where Tim first discovered his passion for Italian cooking, and it was in her rebellious spirit that the idea for this restaurant was born. The name "Rebellion" is a tribute to Maria, whose love of family, food, and breaking the rules left an unforgettable mark on us. Her face even graces our logo, forever reminding us of the love and tradition that inspired this journey.
The Birth of an Idea
The idea to open Rebellion wasn’t born overnight. It started 22 years ago when Tim and Brian met in seventh grade and quickly became lifelong friends. After years of laughter, challenges, and shared memories, they decided to turn their dream into reality. On Tim's 30th birthday, they realized it was time to create something special for Danbury—something unique that didn’t exist here yet. Two years later, with hard work and dedication, Rebellion Kitchen + Bar came to life.
